These energy packed bites taste like peanut butter cookie dough, which is good news for all my fellow cookie dough addicts.You can find a bunch of different versions of these "energy bites" all over the web, which is great because it means these are really adaptable. Don't like coconut? Leave it out. Go without the flour for gluten free, and add a little more oats. Add some dried fruit, poppy seeds, different nuts etc. Whatever you have on hand can easily be incorporated. They can be made more or less healthy depending on your audience. These are great for a quick snack on the way to the gym or after a run, or even just something sweet to help with those cravings.

Ingredients:
- 1/2 cup toasted coconut
- 1/4 cup toasted pecans
- 1 cup old fashioned oats
- 1/3 cup flour
- 1/3 cup honey
- 1/2 cup peanut butter
- 1/4 cup mini semi-sweet chocolate chips
- 1/4 cup milk chocolate chips
- 1 tsp vanilla
- Mix together by hand. Roll into balls and place in refrigerator until slightly hardened. Then store in air tight container in fridge.
