Baked Salmon




If you are looking for an amazingly flavorful, foolproof salmon recipe, then look no further. This recipe turns out perfect EVERY. SINGLE. TIME. So even if you aren't super comfortable cooking fish, you can feel confident with this salmon the very first time you make it. It takes some planning ahead (to marinate) but other than that, it's not too time consuming either. The fish comes out really well-flavored, but slightly salty, so I really like to serve it with couscous or wild rice to tame it down.

Prep time: 1 hour 10 minutes
Cook time: 35 minutes

Ingredients:
  • 4 Tbsp Light olive oil 
  • 1 Tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 Tbsp fresh parsley, chopped*
  • 2 (6 oz) fillets salmon
*Note: 1 ½ tsp dried parsley can be substituted.

Cooking Directions 
  1.  In a glass liquid measuring cup, prepare marinade by mixing   garlic, light olive oil, basil, salt, pepper, lemon juice and parsley. 
  2. In a medium glass bowl or baking dish, cover salmon fillets (make sure they are completely thawed if using frozen) with the marinade. Marinate in the refrigerator about 1 hour, turning occasionally.
  3. Preheat oven to 375°. Cover glass baking dish with aluminum foil leaving enough foil on the end to cover and seal salmon in aluminum foil tent. Place fillets and marinade in aluminum foil covered dish and seal.  Place in reheated oven and bake 35 to 45 minutes, until easily flaked with a fork. (Don't over cook, Mine is almost always done by 35 minutes).
